Asturias is spoilt for choice when it comes to restaurants. From the smallest village to the remotest beach, there is always somewhere to eat right around the corner. These are the restaurants that I personally think are most worth your time and money.
Las Guisanderas
Las Guisanderas are an association of female chefs who represent and safeguard the culinary traditions of Asturias. Since 1997 they have worked to promote the role of women in the professional kitchen, and the enjoyment of typical, workaday Asturian food. The following are the restaurants run by those guardians:

Fine Dining / Cocina de Autor
I've never been a huge fan of the idea of fine dining, despite spending almost my entire culinary career in restaurants that certainly qualified as that. The definition is too hazy, too nebulous. Scratch-made high-quality food made by trained professionals? With excellent service? All of those things can be found at every price point. So you're left with 'artfully presented on the plate' in a 'room with nice decor' at an 'elevated price point'. However, the Spanish distinction of cocina de autor is a more reasonable moniker for truly unique dining, because that's what it means - it's right there in the name - the Signature Cuisine of someone. Food of specific, individual, vision. In counterpoint to cocina tradicional - food cooked in a more traditional, recognizable mode. I like the idea because it allows for very elevated presentations of cocina tradicional and more dressed down yet undeniably unique cocina de autor.
